Potatoes are one of our favorite crops; we grow 22 varieties on the farm. As soon as you can work your soil you can get ready for the tubers to hit the ground. Large potatoes should be cut a few days before you plan to plant, let them heal over. This will cut down on soil borne diseases attacking them. We do not cut fingerlings, but do cut most of our larger potatoes. We make sure there are 2 eyes per section. When you get you’re your tubers you should ‘chit’ them or here in America we call it ‘Greening’. This is the process of putting the seeds tubers into the sun to make the eyes start to make green foliage close to the tuber.
We dig a trench 4” deep by 4” wide. Rows spaced at 2’-3’.
Tubers should be spaced at 6” apart and cover it with 2” of soil. Once plants emerge 1-2” we cover the foliage with soil, and repeat this one more time. We mulch with straw between the rows, and watch out for potato beetles. As soon as the potatoes flower you can start to dig new potatoes. If you do not want to dig all the potatoes you can do what is called ‘grabbling’ this is digging into the potato hill and pulling out a few potatoes, will not killing the entire plant, so that the over potatoes can continue to size.
