Jerusalem Artichoke, Helianthus tuberosa is a Native American Tuber. It grows wild in most states of the union and is easy to put into cultivation. We plant our tubers 4” deep in rows 12” apart. The softer the soil the larger and more tubers you will get. Give this plant room it spreads like mad. Digging the tubers and eating them slows the spread of them but in some areas it might not be the right plant.
They can be harvested in the fall or in the spring (we only dig in the spring) and will keep in the fridge for months.
Enjoy this great plant and eat your landscape.
We love them parboiled and finished in a bit of bacon fat.
