Eggplants

Eggplants like tomatoes and peppers need to be started early on so that we can take full advantage of our growing season and get the longest fruiting season possible. We start our seeds 6-8 weeks ahead of our last frost date. Then transplant the plants outside when they are between 2-5” tall into warm organic soil. Place them 8-12” apart in rows 12-18” apart. Water all transplants before planting and water the plants in once they are planted to help with transplant shock. We watch for flea beetles and fertilize with fish emulsion. That’s it!
Harvest Eggplant on the small side so the seeds are small and the fruit is less bitter.
